Pappadums & vegie bites with cucumber-yoghurt dip

Whip up a creamy cucumber yogurt dip for crunchy veggie snacks kids will love.
Ingredients:
  • 1/2 Lebanese cucumber, coarsely grated and excess moisture squeezed out
  • 180g (2/3 cup) Greek-style natural yoghurt
  • 7.95 gm fresh lemon juice
  • 12 mini pappadums
  • 125g cherry tomatoes, halved,
  • 1 large carrot, peeled, cut into matchsticks
  • 1 celery stick, trimmed, cut into matchsticks.
Instructions:
  • Mix together the cucumber, yoghurt, and lemon juice in a small bowl. Arrange 6 pappadums on a clean turntable in the microwave, cook on High/800 watts/100% for 30-40 seconds until puffed and fully cooked. Repeat with the remaining 6 pappadums. Serve with cherry tomatoes, carrot, and celery.
