Bright and vibrant citrus parfaits that make any meal feel like a celebration, perfect for lifting spirits during the winter months. A stunning treat for both the eyes and taste buds!
Ingredients:
  • 2 cups (16 ounces) thick, plain Greek or Icelandic-style yogurt
  • 1/4 cup (2 3/4 ounces) maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • A pinch of salt
  • 5 navel oranges (about 7 1/2 ounces each)
  • 4 pink grapefruit (about 8 ounces each)
  • 1/2 cup (3 ounces) shelled pistachios, roughly chopped, plus more for garnish
  • 1/2 cup (3 ounces) pomegranate seeds
Instructions:
  • Prepare the yogurt mixture by whisking together yogurt, maple syrup, cinnamon, ginger, cloves, and salt in a bowl until fully mixed. Chill in the refrigerator for 1 hour.
  • Prepare the citrus segments: Trim the ends off the oranges to stabilize them on the cutting board. Carefully peel and remove the pith from the oranges, following the natural curve. Work over a bowl to catch the juices, then cut out the segments. Refrigerate until needed. Repeat the process for the pink grapefruit and store each citrus separately. Save the citrus juice for vinaigrettes, beverages, or enjoy on its own.
  • Toast the pistachios in a small skillet over medium-low heat until fragrant, for about 1 to 2 minutes, shaking regularly to prevent burning. Let them cool.
  • Strain the citrus segments to ensure the parfaits stay perfectly creamy by removing excess juices.
  • Create the parfaits by layering 1/4 cup of the yogurt mixture into 4 stemless wine glasses or parfait glasses. Divide the citrus segments equally among the glasses, reserving some for the next layer. Sprinkle 1 tablespoon of pistachios and pomegranate seeds on top. Repeat the layers, beginning with yogurt and finishing with pomegranate seeds. Finish off each parfait by sprinkling extra pistachios on top for garnish.
  • Indulge in these chilled parfaits within two hours of making them for optimal enjoyment.
