Vegan parfait with maca applesauce, maple coconut flakes, coconut yogurt, and carob paste.
Ingredients:
  • 2 tablespoons carob powder
  • 2 teaspoons cacao powder
  • 0.25 cup coconut milk
  • 0.25 cup unsweetened applesauce
  • 1 teaspoon maca powder
  • 2 teaspoons raisins
  • 1 teaspoon maple syrup
  • 0.25 cup shredded coconut
  • 2 teaspoons maple syrup
  • 0.25 cup coconut yogurt
  • 2 dried figs, thinly sliced
  • 2 fresh strawberries, sliced
  • 0.33333334326744 (1 ounce) square unsweetened chocolate, shaved
Instructions:
  • In a small bowl, mix carob powder and cacao powder. Gradually pour in coconut milk, stirring consistently until smooth.
  • Combine the applesauce and maca powder in a bowl, then stir in the raisins and 1 teaspoon of maple syrup.
  • Combine shredded coconut with a drizzle of rich maple syrup in a mixing bowl.
  • Layer 1 tablespoon each of carob mixture, maple coconut flakes, maca applesauce, and coconut yogurt in 4 digestive glasses or small wine glasses. Chill the parfaits in the refrigerator until very cold, for at least 4 hours.
  • Garnish parfaits with figs, strawberries, and shaved chocolate.
