Delightful vegan apple dumplings: the perfect quick and easy appetizer for any occasion!
Ingredients:
  • 2 cups all-purpose flour
  • 4 tablespoons vegan margarine (such as Earth Balance®)
  • 2.5 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup water
  • 2 yellow apples, peeled and sliced into eighths
  • 0.5 cup brown sugar
  • 0.5 cup water
  • 4 tablespoons vegan margarine (such as Earth Balance®), melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
Instructions:
  • Combine flour, vegan margarine, baking powder, and salt in a bowl, whisking until fine crumbs form. Add water and mix well. Divide dough into 10 equal pieces.
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a baking sheet.
  • Cut each apple eighth into 4 chunks. Boil apple chunks in a saucepan until soft yet firm, for about 5 minutes. Let cool before using.
  • In a microwave-safe bowl, mix brown sugar, water, vegan margarine, vanilla extract, and cinnamon. Microwave for about 30 seconds until the margarine melts. Stir the marinade and drizzle over the cooked apples in the saucepan. Allow the apples to marinate for 10 minutes.
  • Flatten the dough into a circle, place 4 apple chunks in the center, wrap the dough around them, and pinch to seal. Transfer to the prepared baking sheet. Repeat the process with the rest of the dough and apples, saving the extra marinade.
  • Pour the rest of the marinade evenly over the dumplings on the baking sheet.
  • Simply bake in the preheated oven until perfectly golden brown, for 15 to 30 minutes. Serve piping hot.
