Vegan apple pie with a flaky dairy-free crust and a mountain of caramel apples - a plant-based twist on a timeless favorite.
Ingredients:
  • 2.3333332538605 cups all-purpose flour
  • 1 cup vegan margarine (such as Earth Balance®)
  • 1 tablespoon white sugar
  • 0.25 cup ice water
  • 1 cup brown sugar
  • 0.5 cup vegan margarine (such as Earth Balance®)
  • 0.25 cup white sugar
  • 0.25 cup rice milk
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 7 Granny Smith apples - peeled, cored, and sliced
Instructions:
  • In a food processor, blend 2 1/3 cups of all-purpose flour, 1 cup of vegan margarine, 1 tablespoon of white sugar, and salt until mixture clumps together. Slowly add water and pulse until dough forms.
  • Place the dough on a flat surface, knead for 30 seconds, shaping it into a disk. Wrap it with plastic wrap and chill in the fridge until firm, approximately 30 minutes.
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Sprinkle flour on a clean work surface. Roll out the dough into two 10-inch crusts, then gently press one into a 9-inch pie plate.
  • In a saucepan over medium heat, melt 1/2 cup of vegan margarine with brown sugar, white sugar, rice milk, flour, cinnamon, and nutmeg. Stir until the margarine melts and the brown sugar dissolves, about 3 to 5 minutes.
  • In a large bowl, coat apple slices evenly with brown sugar mixture. Fill the bottom crust with the apples and cover with the second crust. Use a sharp knife to create slits in the top crust.
  • Bake in the oven until the crust turns golden brown and the apples appear semi-translucent, for about 45 to 60 minutes.
