Refreshing basil chicken salad with Parmesan, creamy basil-garlic mayonnaise dressing.
Ingredients:
  • 2 whole skinless, boneless chicken breasts
  • salt and pepper to taste
  • 1 cup mayonnaise
  • 1 cup chopped fresh basil
  • 2 cloves crushed garlic
  • 3 stalks celery, chopped
  • 0.66666668653488 cup grated Parmesan cheese
Instructions:
  • Season the chicken with a generous sprinkle of salt and pepper. Roast it at 375 degrees F (190 degrees C) for 35 minutes, or until the juices run clear. Allow it to cool slightly, then chop it into bite-sized chunks.
  • Blend mayonnaise, basil, garlic, and celery in a food processor until smooth.
  • Mix together the diced chicken, blended mixture, and Parmesan cheese until well combined. Chill in the refrigerator before serving.
