Elevate your potato bake with pine nuts and fresh herbs for a modern twist!
Ingredients:
  • 140g (2 cups) fresh breadcrumbs (made from day-old bread)
  • 45g (1/2 cup) shredded parmesan
  • 82.50 ml coarsely chopped fresh continental parsley
  • 82.50 ml coarsely chopped fresh chives
  • 1 x 125g pkt pine nuts
  • 80ml (1/3 cup) olive oil
  • 18 (about 3kg) coliban potatoes, peeled, halved
  • Salt & freshly ground black pepper
Instructions:
  • Mix together breadcrumbs, Parmesan cheese, fresh parsley, chives, pine nuts, and half of the oil in a medium bowl.
  • Preheat the oven to 200°C. Cut 1 potato into thin, evenly-spaced slices, stopping two-thirds of the way through. Arrange the potato flat-side down in a large roasting pan. Repeat with the rest of the potatoes. Drizzle with oil, season with salt and pepper, then roast for 55 minutes until tender.
  • Take the potatoes out of the oven and generously sprinkle them with the breadcrumb mixture. Return them to the oven and bake for an additional 15 minutes, or until they turn a beautiful golden brown. Serve in a heatproof bowl.
