Ingredients:
  • 150g (1 cup) plain flour
  • 80g chilled butter, chopped
  • 60g parmesan, shredded
  • 1 egg yolk
  • 40.00 gm cold water
  • 40.00 ml poppy seeds
Instructions:
  • Pulse flour and butter in a food processor until it resembles fine breadcrumbs. Add parmesan and process until fully combined.
  • In a jug, whisk the egg yolk and water together. Combine the egg mixture with the flour mixture in a food processor until small balls form. Transfer the mixture to a clean work surface, knead until a smooth dough forms. Shape the dough into a 22cm log and flatten the long sides to create a square shape.
  • Lay the poppy seeds on a non-stick baking sheet. Brush the log's sides with water, press into the seeds to coat, wrap in the paper, twist the ends to secure, then chill in the freezer for 20 minutes.
  • 1. Preheat your oven to 180°C. 2. Line a large baking tray with non-stick baking paper. 3. Slice the log into 1cm-thick rounds. 4. Arrange the biscuits on the tray. 5. Bake for 15 minutes or until lightly golden. 6. Allow the biscuits to cool on the tray for 5 minutes. 7. Transfer the biscuits to a wire rack to cool completely.
