Delicious bite-size butter biscuits, ideal with Champagne or wine. Customize with poppy seeds, sesame seeds, or fresh herbs.
Ingredients:
  • 40g (1/2 cup) grated Parmesan
  • 180g chilled butter, diced
  • 11.80 gm Dijon mustard
  • 10.00 gm iced water
  • 50 small fresh continental parsley leaves
Instructions:
  • Preheat your oven to 180°C.
  • Combine the flour, Parmesan, and butter in a food processor until they form fine breadcrumbs. Incorporate the egg yolks, Dijon mustard, and iced water until a dough ball forms.
  • Transfer the dough from the food processor to your hands and shape it into a disc. Wrap the dough in plastic wrap and refrigerate for 1 hour to chill.
  • Divide the dough in half. Roll out one portion on a lightly floured surface to 8mm thickness. Use a 3cm round cutter to shape the biscuits and place them on baking trays. Repeat with the rest of the dough. Gently press a parsley leaf onto the top of each biscuit.
  • Place in a preheated oven until golden brown and fully cooked, about 12 minutes. Allow to cool on the baking sheets, then transfer to an airtight container to store at room temperature for up to 1 week.
