Parmesan Breaded Pork Chops

A modern twist on classic veal Parmesan.
Ingredients:
  • 1/3 cup Progresso™ Italian style bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 4 pork boneless butterfly loin chops, 1/2 inch thick (1 1/4 lb)
  • 1 egg, beaten
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes with Italian herbs, undrained
  • 1 can (8 oz) Muir Glen™ organic tomato sauce
  • 1 small green bell pepper, chopped (1/2 cup)
Instructions:
  • Combine the breadcrumbs and cheese in a shallow dish. Dip the pork in the egg, then coat it with the breadcrumb mixture.
  • Prepare a 12-inch skillet with cooking spray and heat over medium heat. Add pork to the skillet and cook for approximately 5 minutes, flipping once, until nicely browned.
  • Add the rest of the ingredients and bring to a boil. Then, lower the heat, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pork is slightly pink in the center.
