Delicious soda bread pairs perfectly with soup, cheese, or jams.
Ingredients:
  • 3.75 gm bicarbonate of soda
  • Plain flour, to dust
  • 265g (1 3/4 cups) plain flour
  • 240g (1 1/2 cups) wholemeal plain flour
  • 40g (1/2 cup) finely grated parmesan
  • 10.00 gm baking powder
  • 20.00 gm caster sugar
  • 2.40 gm salt
  • 75g butter, softened
  • 310ml (1 1/4 cups) buttermilk
Instructions:
  • Preheat the oven to 220°C and lightly dust a baking tray with flour. Combine the flours, parmesan, baking powder, bicarbonate of soda, sugar, and salt in a food processor. Process until mixed. Add the butter and buttermilk and process until just combined. Transfer the dough to a floured surface and knead for 2-3 minutes until smooth.
  • Form the dough into an 18cm-wide round disc and sprinkle with flour. Transfer it to the baking tray. Score a 1cm deep cross on top of the dough using a small sharp knife.
  • Preheat the oven and bake for 15 minutes. Lower the temperature to 190°C and continue baking for 30 minutes more, or until the bread is golden brown and sounds hollow when tapped. Remove from oven and let it cool on a wire rack.
