Indulge in a decadent arborio rice pilaf with creamy Parmesan and a generous sprinkle of black pepper, the ideal side dish for a light Spring dinner.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cups arborio rice, rinsed in a colander until water runs clear
  • 1 quart low-sodium chicken broth
  • 0.75 cup grated Parmesan cheese
  • 1 teaspoon coarsely ground pepper
  • Salt, to taste
Instructions:
  • In a large saucepan over medium-high heat, melt butter with oil. Add onion and saute until softened, about 3 to 4 minutes. Stir in rice until coated. (You can then turn off the heat and allow it to sit for several hours.)
  • Pour in the flavorful broth, cover the pot, and gently bring it to a simmer. Lower the heat and let it simmer, stirring occasionally, until the rice has absorbed the liquid and reaches a creamy yet slightly al dente texture, approximately 12 minutes. Fold in the cheese and pepper, adjusting with salt if needed. Enjoy hot.
