Savory Parmesan and scallion biscuits with a hint of black pepper. Perfect for picnics, dinner parties, or unexpected visitors.
Ingredients:
  • 2 cups + 2 tablespoons all-purpose flour
  • Dash cayenne
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons baking powder (make sure your baking powder is fresh! no more than 6 months old or you may not get a good rise)
  • 7 tablespoons butter, cold
  • 2 scallions, finely chopped
  • 3 ounces grated Parmesan cheese
  • 3/4 cup buttermilk
  • Kosher, Maldon, or Black salt for topping, optional (not table/iodized salt)
Instructions:
  • Preheat the oven to a toasty 425°F.
  • Combine the flour, cayenne, black pepper, baking powder, and salt in a large bowl and whisk until fully blended. Let it sit aside for later.
  • Dice the butter into small pieces and place them in the freezer for 10 minutes. Toss the frozen butter with flour until well coated. Add cheese and scallions and toss until well coated.
  • Pour in the buttermilk and gently mix it with your hands until just combined. Add a touch more buttermilk if needed, but do so carefully. Avoid over-kneading the dough.
  • On a lightly floured surface, roll out the dough, then form into an 8x8-inch square. Cut into 2x2-inch squares and sprinkle with high-quality salt if desired.
  • Bake until golden at 425°F for 12-16 minutes.
