Create a stunning platter with these zesty cheese biscuits.
Ingredients:
  • 125g butter, softened
  • 250.00 ml grated Swiss/Jarlsberg cheese
  • 2 eggs
  • 312.50 ml plain flour, sifted
  • 1/4 tsp cayenne pepper
  • sea or rock salt
Instructions:
  • Preheat your oven to 180°C and prepare 2 large baking trays by lining them with baking paper.
  • Combine butter and cheese in a bowl. Use an electric mixer to blend until smooth. Mix in 1 egg thoroughly. Fold in flour and cayenne pepper until dough forms.
  • Transfer the dough to a lightly floured surface and knead until smooth. Shape it into a 10cm round, wrap in greaseproof paper, and chill until firm in the refrigerator.
  • Flatten dough to 4mm thickness between baking paper. Use a 5cm fluted cutter to make biscuit shapes. Transfer to trays. Repeat with remaining dough.
  • Beat the remaining egg gently. Coat each biscuit with the egg wash and sprinkle with salt. Bake until golden, about 12 to 15 minutes. Let cool on trays for 5 minutes before transferring to a wire rack. Store in an airtight container for up to 4 days.
  • Enjoy biscuits alongside a spread of flavorful cheese, tangy chutney, and sweet dried fruit.
