Elevate cheese biscuits with pepperoni and basil for a gourmet appetizer platter.
Ingredients:
  • 150g plain flour
  • 120g unsalted butter, chilled, cubed
  • Salt
  • Masterfoods cayenne pepper
  • 100g parmesan
  • 60g pepperoni, cut into 40 thin slices
  • 100g goat's cheese, thinly sliced
  • 20 small green basil leaves
Instructions:
  • In a food processor, blend sifted flour, butter, pinch of salt, and cayenne pepper until mixture looks like fine breadcrumbs. Quickly add parmesan and pulse for 3 seconds. Pour in 1-2 tablespoons of chilled water until dough forms. Gently knead the dough.
  • Roll the dough into a 12cm log on a piece of non-stick baking paper. Secure by rolling up and twisting the ends. Refrigerate for 1 hour before proceeding.
  • Preheat your oven to 200°C and line two baking trays with non-stick baking paper. Thinly slice 20 pieces, each 3-4mm thick, from the log. Arrange them on the trays and bake until they turn golden. Let them cool right on the trays.
  • Sear the pepperoni in a hot skillet for 2-3 minutes until golden-brown. Transfer to a plate lined with paper towel to drain.
  • Place a slice of creamy goat's cheese on each crispy biscuit and top with savory pepperoni and a fresh basil leaf for a burst of flavor.
