Thyme and black pepper biscuits

Impress with unforgettable party dishes that will have guests talking until next year.
Ingredients:
  • 250.00 ml plain flour
  • 20.00 ml fresh thyme leaves
  • 1/2 tsp cracked black pepper
  • 60g butter, chilled, chopped
  • 250.00 ml finely grated parmesan cheese
  • 20.00 gm chilled water
  • 150g vintage cheddar cheese, sliced
  • 1/2 x 284g jar fig jam
Instructions:
  • Combine flour, thyme, pepper, and butter in a food processor until mixture resembles fine breadcrumbs. Then add Parmesan and process until just combined. Lastly, add the egg and water, and process until mixture comes together.
  • Place the dough on a lightly floured surface and roll it into a 20cm log. Wrap it in plastic wrap, twist the ends to seal, and freeze for 2 hours or until firm.
  • Preheat your oven to 180°C/160°C fan-forced and line 2 baking trays with baking paper. Take the log out of the freezer and let it sit for 5 minutes. Trim the ends, slice into 5mm-thick rounds, and place them 3cm apart on the prepared trays. Bake one tray at a time for 15 minutes until lightly golden. Let them cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
  • Garnish with cheese and jam before serving.
