Delicious Parmesan-crusted baked white fish topped with lemony herbed panko for a quick and easy dinner.
Ingredients:
  • 1 lemon, divided
  • 1 tablespoon olive oil, divided
  • 1 clove garlic
  • 1/4 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 tsp Catanzaro herbs
  • 1 pound cod filets or other white fish
  • Salt and pepper to taste
  • 1 tablespoon Dijon mustard
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and neatly line a baking sheet with foil.
  • Cut a lemon in half, then into wedges and squeeze the juice from two lemon wedges into a small bowl. Add 2 teaspoons of olive oil. Using a microphone grater, grate a garlic clove into a paste and add it to the bowl. Stir in panko, Parmesan cheese, and Catanzaro herbs.
  • Drizzle the remaining teaspoon of oil on the baking sheet. Season both sides of the cod with salt and pepper, then place it on the baking sheet. Brush the cod with Dijon mustard, and evenly press the panko mixture onto it.
  • Cook the fish in the preheated oven until it easily flakes with a fork, approximately 15 minutes. Accompany with the extra lemon wedges.
