Buttermilk-soaked cod topped with crispy Parmesan and panko breadcrumbs - a simple and elegant dish perfect for any night.
Ingredients:
  • 4 cod loins, about 6 ounces each
  • 1/2 cup panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 Tablespoon fresh minced parsley
  • 1/2 cup buttermilk, see note
  • Butter-flavored cooking spray
  • Lemon wedges, optional
  • Fresh parsley sprigs, optional
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while you prepare a baking pan lined with foil and a baking rack placed on top.
  • Blot cod loins to remove excess moisture.
  • Mix panko crumbs, grated Parmesan cheese, paprika, salt, pepper, and minced fresh parsley on a plate until thoroughly combined using a fork.
  • Place the buttermilk in a shallow dish next to the plate of crumbs.
  • Coat cod loins in buttermilk, press into crumbs, and place on a rack in a pan. Sprinkle any extra crumbs on top, then spray with butter-flavored cooking spray before baking.
  • Bake the cod loins in the center of the preheated oven for 15 to 20 minutes, checking for doneness with an instant-read thermometer. The cod is ready when it reaches an internal temperature of 145 degrees F (63 degrees C).
  • Garnish with lemon wedges and extra fresh parsley to taste.
