Parmesan and ranch seasoned zucchini chips - a tasty, crunchy low-carb potato chip alternative.
Ingredients:
  • 1 medium zucchini
  • 1 pinch salt to taste
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon ranch dressing mix
  • 1 serving cooking spray
Instructions:
  • Using a mandoline, thinly slice the zucchini into 1/16-inch rounds. Lay them on a clean surface and sprinkle with salt, allowing them to rest for 10 minutes.
  • Pat zucchini slices dry with paper towels to eliminate excess moisture.
  • Preheat the oven to a toasty 220°F (105°C).
  • In a large bowl, toss zucchini with oil until coated. Add grated Parmesan cheese and ranch powder, gently stirring to coat evenly.
  • Prepare 2 large baking sheets by spraying them with nonstick cooking spray. Place zucchini slices on the sheets, ensuring they do not overlap.
  • After baking for 40 minutes in the preheated oven, gently flip the slices and bake for an additional 30 minutes until they reach your desired crispiness. Then, transfer to a plate lined with paper towels.
