Parsley & goat's cheese dumplings

Ingredients:
  • 115g (3/4 cup) self-raising flour
  • 115g (3/4 cup) plain flour
  • 1 x 100g pkt goat's cheese, crumbled
  • 80ml (1/3 cup) milk
  • 2 eggs
  • 40.00 ml chopped fresh continental parsley
  • 20.00 ml chopped fresh chives
  • 75g reduced-fat dairy spread (Devondale brand)
  • Salt & freshly ground black pepper
Instructions:
  • Heat a saucepan of salted water over high heat until boiling.
  • Sift flours into a bowl, then add goat's cheese and create a well in the centre. Whisk together milk, eggs, half of the parsley, and half of the chives using a fork. Combine milk mixture with flour mixture until a soft dough forms. Divide dough into 12 equal portions and shape them into balls.
  • Gently drop the dumplings into the boiling water using a slotted spoon and simmer without a lid for 6-7 minutes until fully cooked. Then place them on a paper towel-lined plate.
  • In a saucepan over medium-high heat, melt dairy spread until foaming. Add dumplings, remaining parsley, and chives; toss to coat. Season with salt and pepper. Serve promptly.
