Ingredients:
  • 2 packets Golden Buttercake packet cake mix
  • 250g unsalted butter, at room temperature, chopped
  • 450.00 gm pure icing sugar, sifted
  • 1-41.20 gm milk
  • Pink food colouring (see tip)
  • 1 Mint Slice biscuit
  • 120g packet raspberry sour straps
  • 2 black Smarties
  • 2 Raffaello chocolates
  • 2 pink Smarties
  • 1 red Lifesaver, halved
Instructions:
  • Preheat your oven to 160°C. Grease and line the base of two 7cm deep, 15cm (base) round cake pans with baking paper.
  • Prepare the packet cake mixes as instructed in a large bowl. Divide the batter evenly between the cake pans and make sure the surface is smooth. Bake both cakes together for 40 to 45 minutes until cooked through. Allow the cakes to cool in the pans for 5 minutes before transferring them onto wire racks to cool completely.
  • Prepare delicious butter icing: Use an electric mixer to whip butter until light and creamy. Gradually add icing sugar in 1/2 cup increments, ensuring thorough mixing. Incorporate milk gradually until the icing reaches a spreadable consistency. Preserve the icing's freshness with plastic wrap while you prepare the cakes. Add pink food coloring to the butter icing until it reaches your desired hue.
  • Evenly trim cake tops. Start by placing one cake in the center of the board. Cover the cake with icing on top and sides. Smooth the icing with a hot knife. Cut a round shape from the remaining cake using a 7cm cutter and place it in the middle of the iced cake for the nose. Finish by spreading icing over the top and sides.
  • Create pig features by cutting the biscuit into a triangle for the ear, covering it with icing, then adding a semi-circle of sour strap on top. Secure black Smarties with icing onto Raffaellos for the eyes and place pink Smarties as nostrils, using a Lifesaver half as the mouth. Make a bow tie from the sour strap and position it under the cake. Finally, top the pig off with a party hat.
