Paska: Fluffy Easter bread with yeast, eggs, butter, sugar, and lemon zest.
Ingredients:
  • 2 (.25 ounce) packages active dry yeast
  • 0.5 cup warm water (110 degrees F/45 degrees C)
  • 0.5 cup white sugar
  • 3 cups warm milk
  • 4 cups all-purpose flour
  • 6 eggs, beaten
  • 1 cup butter, softened
  • 0.25 teaspoon salt
  • 0.25 teaspoon lemon zest
  • 12 cups all-purpose flour
  • 1 tablespoon water
  • 2 tablespoons butter, melted
Instructions:
  • In a large bowl, let 1/2 cup of warm water and yeast sit until it becomes slightly frothy, for about 5 to 10 minutes.
  • In a bowl, dissolve 1/2 cup of sugar in warm milk and let it cool until lukewarm. Combine the milk mixture with the yeast mixture and add 4 cups of flour, stirring well with a wooden spoon. Cover the bowl and let it rise in a dark, warm place until doubled in size and bubbly, which should take about 2 hours.
  • Combine the beaten eggs, 1/2 cup sugar, 1 cup butter, salt, and lemon zest until thoroughly mixed. Slowly incorporate the rest of the flour, one cup at a time, to create a soft dough.
  • Massage dough on a floured surface until smooth and stretchy for about 10 minutes. Transfer dough to a greased bowl, rotating to cover all surfaces. Seal bowl with plastic wrap and let it double in size at a cozy spot for around 2 hours. Gently deflate dough, then let it rise once more for 30 minutes.
  • Divide the dough into three equal parts and shape them into round loaves. Place them on greased baking sheets and let them rise until doubled in size, approximately 45 minutes to 1 hour. Mix 1 beaten egg with 1 tablespoon of water and brush it onto the loaves.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake in a preheated oven for 45 to 50 minutes until the loaves are deep golden brown. Then, brush the tops with melted butter to achieve a soft crust.
