Passionfruit and mango cooler recipe

Whip up a refreshing passionfruit and mango cooler to welcome summer!
Ingredients:
  • 55g white sugar
  • 62.50 ml mint sprigs
  • Lime wedges, to serve
  • 60ml passionfruit
  • 750ml tonic water
  • 125ml passionfruit
  • 330g caster sugar
  • 1 mango, stoned, peeled, chopped
  • 1 tsp vanilla bean paste
  • 125.00 ml mint leaves
Instructions:
  • Prepare the passionfruit-mango syrup by blending the passionfruit pulp until the seeds are finely chopped, then transfer it to a medium saucepan. Combine with sugar, mango, lime juice, vanilla, and water. Cook over medium-high heat until sugar dissolves, then simmer on medium-low for 12 minutes until mango is tender and syrup thickens slightly. Finish by stirring in the mint and allow to cool.
  • Pass the passionfruit mixture through a fine sieve into a bowl, removing solids. Transfer the mixture to an airtight container and chill in the fridge.
  • In a clean food processor, combine the sugar and mint and pulse until the mint is finely chopped. Transfer the mixture to a small plate. Rim each serving glass with a lime wedge, then dip into the mint mixture to coat.
  • Distribute passionfruit pulp evenly into each glass, then add ice and passionfruit-mango syrup. Garnish with a squeeze of lime over each glass and finish with a dollop of tonic water on top.
