Passionfruit and mint caprioskas

Ingredients:
  • 2 ruby red grapefruits, unpeeled, coarsely chopped
  • 3 limes, unpeeled, coarsely chopped
  • 70g caster sugar
  • 250.00 ml mint leaves
  • 500.00 ml crushed ice
  • 250ml vodka
  • 125ml lime juice
  • 125ml passionfruit
Instructions:
  • Combine grapefruit, lime, sugar, and half of the mint in a large mortar or plastic bowl. Using a pestle or the base of a rolling pin, crush the ingredients until they are mashed together.
  • Divide the grapefruit mixture evenly into the serving glasses and add a refreshing touch of ice on top.
  • In a jug, mix together vodka, lime juice, passionfruit pulp, and the leftover mint. Pour into serving glasses and enjoy right away.
