Fluffy passionfruit pudding cake - a delightful spoonful of in-season sweetness.
Ingredients:
  • 100g (1/2 cup) caster sugar
  • 75g (1/2 cup) plain flour
  • 0.60 gm sea salt flakes
  • 170g can passionfruit pulp in syrup
  • 3 eggs, separated
  • 85g unsalted butter, melted
  • 160ml (2/3 cup) milk
  • 20.00 ml finely grated orange rind
  • 42.00 gm fresh orange juice
  • 60ml (1/4 cup) fresh passionfruit pulp (see notes)
Instructions:
  • Preheat your oven to 180C/160C fan forced and generously grease a 2L (8 cup) round baking dish.
  • Combine sugar, flour, and salt in a large bowl, stirring until mixed. Create a well in the center and add passionfruit pulp, egg yolks, butter, milk, orange rind and juice, and 2 tbsp fresh passionfruit pulp. Mix until well combined.
  • Beat egg whites in a bowl using an electric mixer until firm peaks form. Gently fold one-third of the egg whites into the passionfruit mixture until combined. Then, fold in the remaining egg whites until just combined.
  • Transfer the mixture into the ready dish and generously sprinkle the reserved fresh passionfruit pulp on top. Bake for 30-35 minutes, or until beautifully golden and puffed (ensure the cake springs back when gently touched).
  • Allow the cake to cool completely in the dish before serving.
