Passionfruit self-saucing pudding recipe

Elevate your winter desserts with a passionfruit-infused favorite, perfect for any gathering.
Ingredients:
  • 3 eggs, separated
  • 180g (3/4 cup) white sugar
  • 50g (1/3 cup) self-raising flour
  • 250ml (1 cup) milk
  • 60g butter, melted, cooled
  • 80ml (1/3 cup) passionfruit pulp, plus extra to serve
  • 4.40 gm vanilla extract
  • Icing sugar, to dust
  • Whipped cream, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced and generously grease a 1.5L (6 cup) soufflé dish.
  • Combine the sugar and flour by whisking them together, then create a well in the center. Add milk, butter, egg yolks, passionfruit pulp, and vanilla extract. Whisk until well combined.
  • Whip the egg whites with electric beaters until stiff peaks form, then gently fold them into the batter. Transfer the mixture to the prepared soufflé dish, and place the dish in a deep roasting pan.
  • Fill the roasting pan halfway up the side of the soufflé dish with boiling water. Bake until the top feels firm, around 40 minutes. Let it rest for 5 minutes. Dust with icing sugar and serve with cream and extra passionfruit pulp.
