Passover (Pesach) Brownies

Decadent matzo brownies perfected after years of experimentation.
Ingredients:
  • 5 eggs
  • 2.5 cups white sugar
  • 1.25 cups vegetable oil
  • 1.25 cups matzo cake meal
  • 1.5 cups unsweetened cocoa powder
  • 1.25 cups chopped walnuts
Instructions:
  • Whisk together eggs and sugar until light and fluffy. Slowly stream in oil while mixing. Fold in cake meal and cocoa until just combined. Gently stir in nuts or sprinkle them on top for extra crunch.
  • Preheat your oven to 325 degrees F (165 degrees C) and grease a 9 x 13 inch pan. Bake the brownies for 35 minutes, but check them at 30 minutes for doneness. To maintain moisture, it's best to slightly underbake them. Optionally, add nuts on top for a beautiful presentation and easy removal for those who prefer not to have nuts in their brownies.
