Decadent Passover chocolate torte with double chocolate layers and crushed almond topping.
Ingredients:
  • 0.5 teaspoon unsweetened cocoa powder for dusting, or as needed
  • 2 (8 ounce) packages semi-sweet chocolate squares, coarsely chopped
  • 0.5 cup butter
  • 5 large eggs, separated
  • 1 tablespoon vanilla extract
  • 0.25 cup white sugar
  • 0.25 cup chocolate chips
  • 0.25 cup crushed almonds
  • 1 teaspoon confectioners' sugar for dusting, or as needed
Instructions:
  • Heat the oven to 375 degrees F (190 degrees C).
  • Prepare the 9-inch springform pan by greasing it and then dusting it with 1/2 teaspoon of unsweetened cocoa powder.
  • Slowly melt chopped chocolate squares and butter in a heavy saucepan over low heat, stirring until silky and smooth, for 5 to 10 minutes.
  • Combine the egg yolks and vanilla extract in a spacious bowl, whisk until smooth.
  • Slowly incorporate the chocolate and butter mixture into the egg yolk mixture, whisking until fully combined.
  • In a separate bowl, use an electric mixer on high speed to whip egg whites until soft peaks form. Gradually add sugar as you continue to beat the mixture until the sugar dissolves and the egg whites form stiff peaks.
  • Gently fold 1/3 of the egg white mixture into the chocolate mixture. Continue folding in the rest of the egg white mixture until the batter is smooth and fluffy.
  • Evenly distribute the batter in the prepared springform pan.
  • Bake in the preheated oven for around 25 minutes, until the edges start to separate from the pan and the center is firm.
  • Allow the torte to cool in the pan on a wire rack for 10 minutes before gently removing the pan sides.
  • Place chocolate chips in a microwave-safe bowl and microwave on full power for 1 minute. Stir well. Microwave in 15-second intervals, stirring each time, until chocolate is melted and smooth. Be careful not to overheat.
  • Generously pour the melted chocolate chips over the torte. Top with crushed almonds, a sprinkle of confectioners' sugar, and 1/2 teaspoon of unsweetened cocoa powder, adjust as desired. Serve and enjoy!
