Savory Southern-style matzo dressing with adjustable mushroom amount and texture: crispy or moist. Add extra mushrooms to enhance flavor to your liking.
Ingredients:
  • 2 cups matzo meal
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper, or to taste
  • 0.25 teaspoon poultry seasoning
  • 2 cups chicken broth
  • 0.5 cup canola oil
  • 2 tablespoons canola oil
  • 2 tablespoons butter or margarine
  • 3 cups onion, chopped
  • 2 bunches green onions, chopped
  • 1 (8 ounce) package sliced fresh mushrooms
  • 0.5 cup chopped celery
  • 4 extra large eggs
  • 1.5 cups chicken broth
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C. Combine matzo meal, sugar, salt, pepper, and poultry seasoning in a large mixing bowl; set aside.
  • In a small saucepan, bring 2 cups of chicken broth and 1/2 cup of canola oil to a boil. Mix with the matzo until well moistened, then let it cool. In a large cast-iron skillet over medium heat, melt the rest of the canola oil and butter. Sauté chopped onion and green onion until translucent, about 7 minutes. Add mushrooms and celery, cook until celery softens, around 10 minutes.
  • Combine the remaining 1 1/2 cups of chicken stock with the eggs, and mix into the cooled matzo. Gently incorporate the cooked vegetables until well combined, then return everything to the cast-iron skillet.
  • Bake in the preheated oven for 50 minutes until golden brown, stirring halfway through to ensure even browning.
