Indulge in a rich and creamy pasta sauce bursting with flavor using skim milk, fresh herbs, and crispy bacon.
Ingredients:
  • 375g pappardelle or fettuccine pasta
  • 9.20 gm olive oil
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 100g short bacon, sliced
  • 1 tsp fresh thyme leaves
  • 40.00 ml plain flour
  • 515.00 gm skim milk
  • 2 zucchini, sliced thinly into ribbons
  • 125.00 ml grated parmesan cheese
  • Cracked black pepper, to serve
Instructions:
  • Boil pasta in a generously-sized pot of bubbling water for 10-12 minutes, or until perfectly tender. Then, drain the pasta.
  • In a frying pan over medium-high heat, warm oil. Saute onion and garlic until softened, about 2-3 mins. Add bacon and thyme, cooking for an additional 2 mins. Sprinkle in flour and mix well. Remove from heat. Slowly stir in milk while returning to medium heat. Cook until thickened, around 4-5 mins. Incorporate zucchini and cook for 5 more mins. Season to taste, then add cheese and pasta. Serve at once with a sprinkle of cracked black pepper.
