Indulge in a creamy pasta sauce using skim milk, fresh herbs, and shortcut bacon for a lighter, flavorful twist.
Ingredients:
  • 375g pappardelle or fettuccine pasta
  • 9.20 gm olive oil
  • 1 onion, sliced
  • 100g short bacon, sliced
  • 1 tsp fresh thyme leaves
  • 40.00 ml plain flour
  • 515.00 gm skim milk
  • 2 zucchini, sliced thinly into ribbons
  • 125.00 ml grated parmesan cheese
  • Cracked black pepper, to serve
Instructions:
  • Boil pasta in a generous amount of water until perfectly al dente, about 10-12 mins. Drain cooked pasta.
  • Heat oil in a frying pan over medium-high heat. Sauté onion and garlic until softened, about 2-3 minutes. Add bacon and thyme, cook for another 2 minutes. Sprinkle with flour, then slowly pour in milk while stirring constantly. Cook over medium heat until thickened, about 4-5 minutes. Add zucchini and cook for 5 minutes. Season to taste and stir in cheese and pasta. Serve with cracked black pepper.
