Flavorful penne pasta with cannellini beans, onions, and juicy tomatoes.
Ingredients:
  • 1.5 tablespoons extra virgin olive oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 (15 ounce) can cannellini beans
  • 2 cups penne pasta
  • salt to taste
Instructions:
  • Heat olive oil in a medium saucepan. Saute onion until tender, then mix in tomatoes and entire can of beans. Simmer for 10 minutes.
  • Bring a large pot of salted water to a lively boil. Add penne pasta and cook until just tender, about 8 to 10 minutes. Drain.
  • Combine the pasta with the flavorful bean mixture and season with salt to taste.
