Mediterranean-style beans and spinach pasta in 30 minutes - a flavorful twist on a classic dish.
Ingredients:
  • 6 oz. (1 3/4 cups) uncooked penne (tube-shaped pasta)
  • 1 tablespoon olive or vegetable oil
  • 2 garlic cloves, minced
  • 2 (14.5-oz.) cans no-salt-added tomatoes, undrained, cut up
  • 1 (15-oz.) can Progresso™ Chickpeas, drained, rinsed
  • 1 1/2 teaspoons dried Italian seasoning
  • 1 teaspoon sugar
  • 1 (10-oz.) pkg. prewashed fresh spinach, stems removed, chopped (about 8 cups)
  • 2 oz. (1/2 cup) crumbled feta cheese
  • 1/4 cup sliced ripe olives
Instructions:
  • Cook penne according to package instructions until al dente. Drain and cover to keep warm.
  • Heat oil in a large skillet or Dutch oven over medium-high heat until hot. Sauté garlic for 30 seconds. Stir in tomatoes, beans, Italian seasoning, and sugar. Bring to a boil, then simmer for 10 minutes.
  • Stir in the fresh spinach and cook for 3 minutes, or until wilted, stirring regularly.
  • On a large serving platter, layer cooked penne with tomato mixture, then sprinkle with cheese and olives before serving.
