Pasta Pepperoni Pizza Salad

Delicious spinach pasta salad with a pizza twist - loaded with mozzarella, Parmesan, juicy tomatoes, garlic, and pepperoni.
Ingredients:
  • 1 package Betty Crocker™ Suddenly Salad® roasted garlic Parmesan pasta salad mix
  • 1/4 cup cold water
  • 3 tablespoons vegetable oil
  • 1 package (3 1/4 ounces) sliced pepperoni, cut in half (1 cup)
  • 2 cups bite-size pieces fresh spinach
  • 1/2 cup shredded mozzarella cheese (2 ounces)
  • 1 medium tomato, coarsely chopped (3/4 cup)
Instructions:
  • Pour the Pasta mix into a large pot filled 2/3 with boiling water. Let it gently boil without a lid for 12 minutes, stirring occasionally.
  • Combine the seasoning mix, oil, and cold water in a large bowl; set it aside.
  • After draining the pasta, rinse it with cool water and shake it well to drain excess water. Next, mix the pasta and pepperoni into the seasoning mixture. Right before serving, add the spinach and toss everything with cheese, tomato, and the topping. Serve immediately.
