Pepperoni pizza-inspired pasta salad with bell peppers and mushrooms for a customizable twist on a classic favorite.
Ingredients:
  • 12 ounces penne pasta
  • 1 small green bell pepper, chopped
  • 1 small red bell pepper, chopped
  • 1 tomato, chopped
  • 1 (4 ounce) can sliced mushrooms, drained
  • 0.25 cup sliced black olives
  • 1 (3 ounce) package pepperoni slices, cut into quarters
  • 0.5 cup mayonnaise
  • 0.5 cup Italian-style salad dressing
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Bring a pot of salted water to a boil. Cook penne for about 11 minutes until al dente. Drain and transfer to a large serving bowl.
  • Combine the colorful assortment of green and red bell peppers, juicy tomato, earthy mushrooms, briny olives, and savory pepperoni with the pasta in a large bowl.
  • Combine mayonnaise, Italian dressing, garlic, oregano, salt, and pepper in a bowl and mix until smooth. Drizzle the mixture over the pasta and toss until evenly coated. Sprinkle with mozzarella and Parmesan cheese. Chill in the refrigerator for at least 1 hour before serving.
