Savory bacon and sharp Cheddar cheese pair perfectly with sweet caramelized onions for a delicious twist.
Ingredients:
  • 6 medium onions, thinly sliced (4 cups)
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons butter or margarine
  • 1 package (16 ounces) fettuccine
  • 1/2 pound sliced bacon
  • 1 1/2 cups whipping (heavy) cream
  • 2 cups shredded Cheddar cheese (8 ounces)
Instructions:
  • In a 3-quart microwave-safe casserole dish, combine onions, oil, and butter. Microwave uncovered on Medium-High (70%) for 20 to 30 minutes, stirring occasionally, until onions are golden brown. Drain the onions before use.
  • Cook the fettuccine according to package directions. In a 10-inch skillet, cook bacon over low heat until crisp, turning occasionally. Drain on paper towels and chop into small pieces.
  • In a 2-quart saucepan, bring whipping cream to a boil. Stir in 1 cup of cheese and the onions. Pour over fettuccine and toss well to coat. Sprinkle remaining 1 cup cheese and bacon on top before serving.
