Savory pasta with Italian sausage, roasted peppers, olives, capers, tomato, and basil.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 3/4 pound Italian sausage, sweet or hot
  • 2 to 3 cloves garlic, minced
  • 1 cup roasted red bell peppers, chopped
  • 1 tablespoon capers
  • 1/2 cup pitted black olives, halved
  • 3 to 4 large fresh tomatoes, seeded and chopped
  • 1/4 cup fresh basil, chopped
  • 1 pound linguine or other pasta
Instructions:
  • Bring a generous amount of salted water to a rolling boil in a large pot.
  • In a large sauté pan over medium heat, brown the sausage. Add garlic, roasted red peppers, capers, and olives. If the pasta water isn't boiling yet, remove the pan from the heat.
  • Add the pasta to the pot once the water reaches a rolling boil.
  • Add the chopped tomatoes and fresh basil to the sizzling sausage mixture in the sauté pan as the pasta nears completion. Mix well and reduce the heat to medium-low.
  • Combine the drained pasta with the sausage mixture in a large bowl, tossing to combine.
