Vegan-friendly recipe.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 1 x 800g can Italian diced tomatoes
  • 22.20 gm tomato paste
  • 82.50 ml chopped fresh continental parsley
  • 2.50 gm caster sugar
  • Salt & freshly ground black pepper
  • 400g Cucina Matese Penne Rigate Italian Pasta
Instructions:
  • In a large frying pan over medium heat, let the oil warm up. Add the onion and cook uncovered, stirring often, for about 3 minutes until slightly softened. Add the garlic and continue to cook, stirring, for another minute until fragrant.
  • Add the tomatoes and tomato paste, then crank up the heat to high until it reaches a boil. Lower the heat to medium and let it simmer uncovered, stirring occasionally, for 6-7 minutes until the sauce slightly thickens.
  • Gently fold in the fresh parsley and sweet sugar, then savor the flavors and adjust with a sprinkle of salt and pepper as needed.
  • Cook the pasta in a large saucepan of salted boiling water according to the package instructions until al dente. Drain and return the pasta to the pan.
  • Toss the sauce with the pasta and serve promptly.
