Elevate your salad with vibrant tomato pesto and hassle-free frozen cooked chicken.
Ingredients:
  • 1 cup uncooked orzo or rosamarina (rice-shaped pasta)
  • 1 pkg (9 oz) frozen diced cooked chicken breast, thawed
  • 1 cup crumbled feta cheese (4 oz)
  • 1/4 cup chopped fresh basil
  • 1/4 cup purchased sun-dried tomato pesto
  • 4 medium tomatoes
Instructions:
  • Cook the orzo according to the package instructions, then rinse with cold water to cool and drain well.
  • In a large bowl, gently mix together chicken, cheese, basil, pesto, and salt. Add cooked orzo, toss gently to coat, and sprinkle with lemon juice.
  • Prepare the tomato cups by removing the stem end and scooping out the pulp. Fill the tomato cups with the salad mixture and consider serving on plates lined with lettuce.
