Pesto pasta with zucchini, feta and tomato

Enjoy this pasta dish hot for dinner or cold as a refreshing salad.
Ingredients:
  • 500g dried shell pasta
  • 9.20 gm olive oil
  • 2 medium zucchini, thinly sliced
  • 1 190g jar pesto
  • 200g feta, crumbled
  • 250g (1 punnet) ripe cherry tomatoes, halved
Instructions:
  • Boil pasta in a generously salted pot of water until perfectly cooked according to package instructions.
  • Heat olive oil in a small frying pan over high heat. Cook zucchini, stirring often, for 3 minutes until tender.
  • After draining the pasta, toss it back into the saucepan. Mix in the pesto until the pasta is well coated. Add the zucchini, feta, and cherry tomatoes and mix until evenly combined. Serve right away.
