Pasta with tuna, chilli, tomatoes and parsley

Elevate pantry staple tuna into a delicious and simple pasta meal.
Ingredients:
  • 400g short pasta (we used farfalle or bowties)
  • 2 large garlic cloves, finely chopped
  • 1/4 tsp dried chilli flakes
  • Zest and juice of 1 lemon
  • 425g can tuna in springwater, drained, flaked
  • 4 tomatoes, chopped
  • 40.00 ml flat-leaf parsley leaves, chopped
  • 20g parmesan
Instructions:
  • Prepare the pasta in a large pot of boiling salted water as directed on the package.
  • In a skillet, gently warm the oil over low heat. Stir in the garlic, chilli, and zest, cooking for 2-3 minutes until softened. Season with salt and pepper, then mix in the tuna and tomato. Increase the heat to medium and cook for 2-3 minutes until heated through, stirring occasionally.
  • Drain the pasta, saving 1/3 cup (80ml) of cooking water. Put the pasta back into the pan along with the tuna mixture, lemon juice, and parsley. Mix over low heat for 1 minute until heated through and well combined.
  • Garnish the pasta with a generous sprinkle of freshly grated Parmesan cheese.
