Chilean potato pie with seasoned beef, mashed potatoes, tomatoes, and Panquehue cheese. A comforting Latin American classic.
Ingredients:
  • 5 cups potatoes, peeled and cubed
  • 2 tablespoons butter, or to taste
  • 2 large eggs, beaten
  • 0.5 cup vegetable oil
  • 1 medium onion, diced
  • 2 medium tomatoes, diced
  • 1 tablespoon tomato paste
  • 1 pound ground beef
  • 2 tablespoons shredded Panquehue cheese
  • 1 pinch cayenne pepper
  • salt and black pepper to taste
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Reduce heat to medium-low and simmer until tender, around 20 minutes.
  • While the potatoes cook, warm oil in a large skillet over medium heat. Sauté onion until translucent, around 5 minutes. Add garlic in the last minute. Mix in diced tomatoes and tomato paste; cook until tomatoes soften, about 3 to 5 minutes.
  • In a skillet, cook the ground beef until browned and crumbly for about 10 minutes. Mix in Panquehue cheese, parsley, and cayenne pepper. Season with salt and pepper, then let sit until later.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 2-quart baking dish.
  • After draining the potatoes in a colander, let them steam dry briefly. Return the potatoes to the pot and mash them with butter and salt until smooth. Allow the mixture to cool slightly for 5 to 10 minutes, then mix in a beaten egg.
  • Start by generously layering the bottom of the prepared baking dish with half of the creamy mashed potatoes. Next, add the flavorful ground beef mixture on top of the potatoes, making sure to cover it completely with the remaining mashed potatoes.
  • Cook the potatoes in the preheated oven until they are hot and golden brown on top, for approximately 40 minutes.
