Pawpaw with creamy orange sauce & lavash crisps

Ingredients:
  • 1 piece (17.5 x 21.5cm) lavash bread
  • 9.20 gm vegetable oil
  • 7.50 gm caster sugar
  • 0.63 gm ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 (about 600g) pawpaw
  • 1 200g container light French vanilla Fruche
  • 80ml (1/3 cup) fresh orange juice, strained
Instructions:
  • 1. Preheat your oven to 200°C. 2. Lightly brush lavash with oil. 3. Mix sugar, cinnamon, and cardamom in a small bowl. 4. Sprinkle the sugar mixture over the lavash. 5. Place the lavash on a baking tray. 6. Bake in the preheated oven for 10 minutes until crisp. 7. Cool on a wire rack for 5 minutes, then break into 8 pieces.
  • While you wait, cut the pawpaw in half, peel it, remove the seeds, and slice it thinly crosswise. Arrange the slices on serving plates.
  • Mix the Fruche and orange juice in a small bowl until well combined to create the sauce.
  • Drizzle sauce over pawpaw, top with lavash crisps, and serve immediately with any extra sauce on the side.
