Pea, dill and rice soup

Cozy up with a comforting pea, dill, and rice soup for a winter warmer.
Ingredients:
  • 18.20 gm olive oil
  • 1 leek, white part only, thinly sliced
  • 2 celery sticks, finely chopped
  • 2 garlic cloves, crushed
  • 100g rice
  • 1 litre (4 cups) chicken style liquid stock or vegetable liquid stock
  • 230g pea
  • 42.00 gm lemon juice
  • 40.00 ml finely chopped fresh dill
Instructions:
  • - In a large saucepan, heat oil over medium heat. - Sauté leek and celery for 5 minutes until leek softens. - Stir in garlic and rice for 1 minute until well combined. - Pour in stock and bring to a boil. - Simmer on medium-low heat for 10 minutes until rice is tender.
  • Once peas are added, cook until they turn bright green and are heated through. Remove from heat and mix in lemon juice and dill. Stir well to combine, then season with salt and pepper to taste. Finally, divide soup among serving bowls and serve promptly.
