Simple, Healthy Green Pea Soup

Kid-approved green pea soup with caramelized onions and dill - light, flavorful, and satisfying.
Ingredients:
  • 2 teaspoons butter
  • 2 cloves garlic, chopped, or more to taste
  • 2 (16 ounce) packages frozen peas
  • 0.5 teaspoon dried dill, or to taste
  • 1 (900 ml) carton chicken broth, or as needed
  • 0.33333334326744 cup milk
  • salt and ground black pepper to taste
Instructions:
  • In a large pot over medium-high heat, melt butter until sizzling. Cook onions in the butter until they turn golden and translucent, approximately 10 minutes. Add garlic to the onions and sauté until fragrant, about 1 minute.
  • Combine peas and dill with the onion mixture and pour in chicken broth until covered. Bring to a boil, lower the heat to medium-low, and simmer for 10 to 15 minutes until hot. Stir in milk.
  • Blend pea soup in batches until smooth using an immersion blender, making sure not to overfill the blender. Season with salt and pepper to taste.
