Pea, haloumi and mint salad

Elevate peas and mint with zesty lemon and crispy golden haloumi.
Ingredients:
  • 380g (2 1/2 cups) frozen baby peas
  • 27.30 gm extra virgin olive oil
  • 180g haloumi, cut into 1cm-thick slices
  • 250.00 ml fresh mint leaves
  • 1 lemon, zested
  • 21.00 gm lemon juice
  • 1.25 gm caster sugar
Instructions:
  • Place the peas in a large heatproof bowl and cover them with boiling water. Let them stand for 1-2 minutes until tender, then refresh them under cold water and drain.
  • In a non-stick frying pan over medium-high heat, heat 2 teaspoons of oil. Cook the haloumi for 2 minutes, turning occasionally, until golden brown. Place on a plate lined with paper towel to absorb any excess oil.
  • In a large bowl, mix together the peas, haloumi, fresh mint, and lemon zest. Season with salt and pepper to taste.
  • Combine the remaining oil, lemon juice, and sugar in a small bowl, then drizzle over the pea mixture. Mix everything together until well combined.
