Creamy yogurt dressing tossed with cauliflower, peas, olives, celery, and crunchy cashews.
Ingredients:
  • 3 cups frozen peas, thawed
  • 1 head cauliflower, chopped into bite size pieces
  • 0.5 cup pitted green olives, chopped
  • 1 cup thinly sliced celery
  • 0.25 cup ranch dressing
  • 1 cup nonfat plain yogurt
  • 1 cup cashew nuts
Instructions:
  • Combine the peas, cauliflower, olives, and celery in a large bowl.
  • Combine ranch dressing, yogurt, and garlic powder in a small bowl, whisk until well blended. Pour the mixture over the peas and stir until evenly coated. Finish by sprinkling cashews on top right before serving.
