Pea Salad with dill dressing

Ingredients:
  • Salt & ground black pepper, to taste
  • 1 fresh corn cob, husk and silk removed
  • 150g snow peas, topped, tailed
  • 300g fresh green peas, shelled
  • 150g sugar snap peas, topped, tailed
  • 1 small green oak lettuce, washed, dried, leaves torn
  • 80mls (1/3 cup) light olive oil
  • 42.00 gm fresh lemon juice
  • 3 tsp finely chopped fresh dill
  • 4.50 gm sugar
Instructions:
  • 1. Start by bringing a large saucepan of water to a boil. Drop in the corn cob and boil for 5 minutes. Remove the corn using a slotted spoon. 2. Next, add the snow peas to the boiling water and cook for 1 minute. Remove them with a slotted spoon. 3. Follow by adding the green peas and sugar snap peas to the boiling water. Boil for 2 minutes or until tender crisp, then drain. 4. Refresh the corn and all the peas under cold running water, then drain well. 5. Finally, using a sharp knife, carefully cut the corn kernels from the cob lengthways.
  • Whisk together light olive oil, lemon juice, dill, and sugar to create the dressing. Season with salt and pepper to taste.
  • In a serving bowl, mix together the corn kernels, peas, and lettuce. Drizzle the dressing on top and toss until well combined.
