Peach, basil and burrata salad with garlic croutons recipe

"30-minute vibrant and nutritious salad, ideal for a quick lunch or a flavorful dinner accompaniment."
Ingredients:
  • 1 large garlic clove, halved
  • 4 x 38g slices wholegrain sourdough bread
  • 1 butter lettuce, leaves separated
  • 2 Lebanese cucumbers, cut into thin ribbons
  • 3 peaches, sliced
  • 125.00 ml fresh basil leaves
  • 18.20 gm extra virgin olive oil
  • 20.00 ml white balsamic vinegar
  • 21.00 gm fresh lemon juice
  • 1 small French shallot, finely chopped
  • 150g burrata, drained
Instructions:
  • 1. Preheat your oven to 200C/180C fan forced. 2. Line a baking tray with baking paper. 3. Rub the cut side of garlic on the bread. 4. Tear the bread into bite-sized pieces, then place them on the prepared tray. 5. Lightly spray the bread with oil and season with salt. 6. Bake for 8-10 minutes or until golden and crisp. 7. Set aside to cool before serving.
  • In a large serving bowl, combine lettuce, cucumber, peach, and basil. In a small bowl, whisk together oil, balsamic, lemon juice, and shallot. Sprinkle garlic croutons over the salad and add burrata on top. Drizzle the dressing over the salad and serve right away.
