Revamped pavlova with roasted peaches, raspberries, and Turkish delight.
Ingredients:
  • 6 Free Range Egg whites
  • 1.25 gm cream of tartar
  • 330g caster sugar
  • 5.00 gm cornflour
  • 600ml thickened cream
  • 250g crème fraîche
  • 2 tsp rosewater essence
  • 125g raspberries, crushed
  • 190g Turkish delight, coarsely chopped
  • 4 white peaches
  • 4 yellow peaches
  • 30.00 gm caster sugar
  • 60ml amaretto
Instructions:
  • Preheat the oven to 180°C. Halve the peaches using a small serrated knife and remove the stones. Place the peaches, cut-side up, in a large roasting pan. Sprinkle with sugar and drizzle with liqueur or orange juice. Bake for 30 minutes or until tender. Allow to cool, then transfer to a shallow container, keeping the syrup. Chill in the fridge for 1 hour before serving.
  • Lower the oven temperature to 100°C and line a large baking tray with parchment paper.
  • Whip the egg whites and cream of tartar in a spotless bowl using an electric mixer until they form stiff peaks. Slowly incorporate the sugar, 1 tablespoon at a time, making sure to mix thoroughly after each addition until the sugar dissolves and the mixture becomes thick and glossy. Gently fold in the cornflour until just combined.
  • Spoon the mixture onto the lined tray using a large metal spoon and shape it into a 20cm x 30cm rectangle with a palette knife. Bake for 1 1/2 hours until the pavlova is dry to the touch. Turn off the oven and let the pavlova cool inside with the door slightly open for 2 hours.
  • Whip the cream, crème fraîche, and rosewater essence together using an electric mixer until soft peaks form. Then fold in the crushed raspberries gently to create a marbled effect.
  • Place the pavlova on a large serving platter. Add the cream mixture and roasted peaches on top. Sprinkle with Turkish delight and extra raspberries. Finish by drizzling with the reserved syrup and serve promptly.
